Campechana
Diane and I were both in the mood for something light this evening. We decided to make seafood Campechana. We mixed crab meat, shrimp, mango and avocado with a tomato based sauce, spike it with peppers grown in our garden and voila. Chips and Campechana make for a great Monday evening meal.
